Sweet & Spicy Bacon Wrapped Pickle Chips

Salty, Sweet and Spicy. A delicious kick up the backside.

15 Slices Thin Streaky Bacon

30 Sweet & Spicy Pickle Chips

Wilson Sweet & Spicy Pork Rub

METHOD:


Step 1

Pre Heat The Barbecue to 275F/135C. For this cook, Iā€™m using my Oklahoma Joe Bandera.

Fill a chimney starter with briquettes and light. Once the coals have ashed over white, pour the lit coals into the fire box, open the vents and dial in.

Step 2

Cut the bacon strips in half, then lay a pickle chip at one each end of the strip and wrap.

Step 3

Place the wrapped strips onto a wire rack seam side down and season the top side with the sweet and spicy rub.

Step 4

Smoke the pickle chips for 40-45 minutes until the bacon is nice and rendered. I like them slightly crispy around the edges.

Remove from the BBQ and serve with a good dip of Alabama White Sauce.
