Crispy Peri Peri Wings

Hot & spicy wings, finished with a cooling lemon & parsley mayo.

1 kg Chicken Wings

1 Tbsp Corn Starch

Portugese Style Rub

Peri Peri Sauce

2 Tbsp Mayonaise

1/2 Lemon

1 Bunch Fresh Parsley, Finely Chopped

Salt & Pepper

Canola Spray


METHOD:


Step 1

Pre Heat The Barbecue to 375F/190C. For this cook, Iā€™m using my Traeger Timberline 850.

Step 2

Remove the wings from their packaging and pat dry with a paper towel. Add to a bowl, followed by the corn starch and Portuguese seasoning, then using your hands, mix together patting the seasoning into the wings. I like to do this with gloves to keep things clean.

Step 3

Place the wings onto a wire rack, then onto the bbq and cook for 30-35 minutes or until they reach an internal temp of 190F/88C. About half way through, I like to give them a spray with canola oil or duck fat to help crisp them up.

Step 4

While the wings are cooking. Place the mayo, Juice of half a lemon, and chopped parsley into a bowl and Mix well to combine. Season with salt and pepper.

Step 5

When the wings are done, remove from the bbq and fire into a large bowl. Coat with the peri peri sauce and toss to evenly coat. Plate the wings and drizzle with the lemon and herb mayo.
