Shopping List:

900g Chicken Nibbles

Four Sauceman White Rub

Four Sauceman Manuka Hot Honey Rub

10 Strips Streaky Bacon, Cut in Half

Habanero Glaze

Ranch Style Sauce

Special Equipment:

Chimney Starter

Instant Read Thermometer

METHOD:

Step 1

Load up a chimney starter with coals and get them lit. Once ashed over, pour the coals into the bbq on one side and pre heat to a medium high heat. For this cook, I’m using my Oklahoma Joe Black Jack Kettle.

Step 2

Remove the chicken nibbles from its packaging and pat dry. Season on all sides first with the white rub, followed by the hot honey rub. Slice the bacon in half, the wrap one strip around each nibble.

Step 3

Season the nibbles again in the same order, then place onto the indirect side of the grill and cook for 30 minutes. Glaze the nibbles with a spicy habanero glaze, then cook for a further 5 minutes. Remove from the kettle and serve with a cool ranch sauce.
