Jalapeño Popper Chicken

4 Chicken Breasts
4 Fresh Jalapeños, deseeded
15g Cream Cheese, Softened
1 Cup Mozzarella Cheese, Grated
Wilson BBQ Clucking Good Chicken Rub
16 Strips Streaky Bacon
METHOD:
Step 1
Pre heat the BBQ to 375F/190C. For this cook, Im using my Traeger Timberline 850.
Step 2
To a bowl, add the cream cheese, mozzarella and chicken rub, mixing well to combine. Add to a zip lock bag or piping bag and remove any air.
Step 3
Slice the top of the jalapeños off and discard any pith & seeds. Pipe the cream cheese mixture into the chillies cavity until full.
Step 4
Butterfly the chicken breasts and season with chicken rub. Add a dollop of the leftover cream cheese mixture to the middle followed by the popper.
Step 5
Roll the chicken breasts back together tight, then wrap in 3-4 strips of streaky bacon. Secure with a couple of tooth picks.
Step 6
Season again with chicken rub, then place into a preheated bbq at 375F, cooking until they r each an internal temp of 165F. Around 45 minutes depending on how big the chicken breasts are.
Rest for 5 minutes before slicing. Watch out for the oozing cheese.
