BBQ Butterflied Chicken Drumsticks

Ingredients:


  • 1.2 kg chicken drumsticks approx 3 drumsticks per serve

  • 2 tbsp buffalo chicken rub

Alabama White Sauce

  • 1 C mayonnaise

  • ¼ C apple cider vinegar

  • 2 tbsp brown sugar

  • 1 tbsp dijon mustard

  • 1 tsp lemon juice

  • 1 tsp prepared horseradish

  • ¼ tsp cayenne pepper


METHOD:


Step 1

Pre heat the bbq to a high indirect heat, around 400F/ 204C. I used a kettle cone in the centre of the bbq.

Step 2

Using a sharp knife, slowly cut down either side of the drumstick bone, about half way through the thickness of the drumstick. Using your fingers, spread the meat to butterfly.

Step 3

Season the chicken liberally with your chosen rub, then slide into the bbq around the heat source. Cook for 15-20 minutes until hitting 190F/ 87C.

Step 4

For the Alabama White Sauce. Add all the ingredients into a bowl and whisk well to combine. You can use this straight away or cover and leave to set for a couple of hours.

Step 5

Dip that chikkie in that saucie and fall in love with drumsticks again!
