BBQ FRIED RICE

Prep: 3 hours 25 minutes | Cook: 30 minutes | Total: 3 hours 55 minutes


Ingredients:


  • 2 C long-grain white rice

  • 1 tbsp rice bran oil

  • 200 g sliced ham chopped into cubes

  • ½ C shelled edamame beans

  • ¼ C frozen corn kernels or fresh if in season

  • 3 eggs

  • 4 spring onions sliced

  • ⅓ C soy sauce

  • ⅓ C sesame oil


METHOD:


Step 1

Cook the rice according to the packet instructions, then spread out onto a baking tray and leave in the fridge uncovered to dry out. This will take a few hours at least.

Step 2

Preheat the barbecue to a high heat and spray down with the oil.

Step 3

Add the rice to the hot plate, then using a metal spatula, begin to move the rice around. You want to spread the rice out flat to have as much surface area frying whilst keeping it moving so it doesn't burn.

Step 4

Next drop the cubed ham alongside the rice and fry. You only need to warm the ham. Once the rice begins to take on colour, pour over the soy and sesame oil and continue to move around to combine all the flavours.

Step 5

Add the veg next to the ham and fry for a minute before combining everything with the fried rice.

Step 6

Crack the eggs next to the mixture and season with salt and pepper. When the eggs begin to cook, break the yolks then flip and chop with the spatula, breaking the egg up into bite sized pieces.

Step 7

Incorporate the egg into the rice, then check the seasoning. At this point you can add more soy and sesame oil to suit your taste.

Step 8

Top with the sliced spring onions and give one more mix. Remove from the barbecue and serve in a big bowl family style.You’ll never need takeaway fried rice again.
