Grilled Flanken Ribs With Jalapeño Purée

Ingredients:


6 Flanken Cut Beef Ribs

Worcestershire Sauce

Favourite BBQ Rub

Jalapeno Purée:

2-3 Green Jalapeños

1 Brown Onion, Halved

2-3 Garlic Cloves

1 Tbsp Olive Oil

25 mls Fish sauce

Salt & Pepper


METHOD:


Step 1

Pre heat the BBQ. For this cook, Im using my Weber Mastertouch Kettle.

Step 2

Start with the jalapeño puree. Cut the onion in half, then add to the grill along with the garlic cloves and jalapeños to char and blister for a couple of minutes.

Step 3

After a good charring, remove from the bbq and place on a chopping board. Cut the steams off the jalapeños and remove the seeds. Add all the veg to a blender, along with the fish sauce and olive oil, salt and pepper and blend into a smooth puree. Check the seasoning is to your liking.

Step 4

Rub the ribs down in a light coating of Worcestershire sauce, then season the short ribs on both sides with your chosen rub. I used a combo of Spanglish Asadero Steak Chop and Surf and Turf Rubs.

Step 5

Grill the flanked ribs hot and fast flipping every minute or so, cooking the ribs for a total of 3-4 minutes.

Step 6

Plate up the ribs with a healthy spread of jalapeño puree and enjoy!
