Buffalo Chicken Nibbles

1 kg Chicken Wings, Broken Down
Buffalo Chicken Sauce
Seasoning:
1/2 tsp Salt
1/4 tsp Black Pepper
1/4 tsp Garlic Powder
1/4 tsp Onion Powder
1/4 tsp Smoked Paprika
1/4 tsp Cayenne Pepper
1/2 tsp Oregano
1/2 tsp Thyme
Special Equipment:
Chimney Starter

METHOD:
Step 1
Fill a chimney starter half full with coals, place a fire lighter underneath and light. Once the coals have ashed over, place a Kettle Kone in the centre of the bbq and pour in the lit coals. Pre-heat to 350-400F/ 176-204C. For this cook, I used my Oklahoma Joe Black Jack Kettle.
Step 2
Prepare a poultry safe board, then remove the chicken from its packaging and break down into drums and flats. Place onto a baking tray and pat dry. Prepare the rub.
Step 3
Place all the seasoning ingredients into a bowl or shaker and stir/shake to combine. From a height season the nibbles on all sides. I like to use nitrile gloves to do this as it helps keep things hygentic.
Step 4
Place the nibbles around the perimeter of the bbq and cook for 30-40 minutes, turning half way through. The chicken is safely cooked at 165F/74C but I like to take wings or nibbles to 195F/90C. This way the chicken will be crispy and fall off the bone.
Step 5
Remove the chicken from the barbecue and place into a bowl. Drizzle with your favourite buffalo sauce and toss the chicken, coating everything generously.
Serve immediately.
