Coffee Crusted Lamb Cutlets

Ingredients:


1x Rack of Lamb

Olive Oil

Wilsons Coffee Rub

Chopped Parsley, Garnish

Special Equipment:

Sharp Knife

Instant Read Thermometer


METHOD:


Step 1

Remove the Lamb from its packaging and pat dry with a paper towel.

Next, using a sharp knife, slowly remove any silver skin being careful not to cut too deep into the the meat and discard. To create the lollipops, simply slice between the bones into individual cutlets.

Step 2

Line the lollipops up and brush with a little olive oil on both sides. Sprinkle the Wilsons Coffee Rub generously from a height, patting the rub into the meat on both sides, then leave the rub to adhere for 5-10 minutes.

Step 3

Heat the bbq to a medium high heat and add a little oil to the flat plate. Place the lollipops on the bbq and cook for 2 minutes a side. The cook time will largely depend on the size of your lamb cutlets, but the internal temp should hit 140F/ 60C

Remove from the heat and rest on a serving board for 1-2 minutes.

Step 4

Garnish with a little chopped parsley, grab your self a lollipop and enjoy.

Top Tip:

Remove the lamb from the fridge 20- 30 minuets before cooking. This will make for a more even cook.
